What will I ever do....???

What will I ever do with my brilliant, smart boy who can't ever seem to get an assignment finished and turned in on time? If he does get it finished on time it was by the skin of his teeth. I want to choke him sometimes, but I see so much of myself in his procrastinating ways that I try not to scold him too much. Alas, he is going to be just like I was in college (if he ever makes it that far). The professor would give an assignment for some major project and while everyone would run back to their dorm rooms and get started I would inevitably put it off until the very last minute. I never meant too. I always wanted to do better. I never did, though. I don't want my boy to be like I was. I want him to be the good student who is finishing assignments early. I don't want him to be confined to his little study corner, missing out on all of the fun because he waited until the last minute to get started on his project. Bless his heart, Lord. I know it is difficult on his nerves, because it is hard on mine. I can remember those days and I still have them every now and then. I thank God that I'm out of school. It is a focus thing. I don't know. Maybe we both have attention deficit disorder. Maybe there is some hope for him after all. And me? Well, it just might not be too late for me either.

Pickled Eggs and Beets

Homemade Pickled Eggs and Beets

This recipe is so quick and easy, yet yields fabulous results. It has become a tradition in our family for me to prepare a gallon size jar of pickled eggs and beets at Easter time. The recipe is very easy and can be prepared with items that you already have on hand. The ingredients you will need to make a gallon jar of pickled eggs and beets are:

1 flat of hard boiled eggs, peeled (30 eggs)

3 - 15 oz cans of sliced beets, in juice

3 cups white vinegar

1 cup white sugar

2 oz pickling spice

½ teaspoon salt

½ teaspoon garlic powder

1. Drain the juice from the beets into a 2 quart saucepan.

2. Add all of the other ingredients except for the beets and eggs and bring this to a boil.

***Be careful not to breathe in the steam because the boiling vinegar is very strong!***

3. Remove from heat and allow this mixture to cool.

4. Place the boiled eggs and sliced beets into a clean, sterilized 1 gallon jar that can be fitted with a lid.

5. After the vinegar mixture has cooled pour the entire sauce pan full into the gallon jar over the beets and eggs.

6. Cover this with the lid and allow it to set in the fridge for two to three days before serving. The longer it sets the better the eggs and beets taste.

If it bothers you to have the big pieces from the pickling spice floating around in the mixture you can tie these in a piece of cheese clothe and remove this after it has been in the jar for a day or so. I think it adds to the "pickled" look, though. The eggs will turn red and this makes a very nice display in the bright juice with the pickling spices floating around.

If you can't find pickling spice in the spices aisle you can make this blend yourself. A jar of pickling spices will typically contain cinnamon, mustard seeds, dill seeds, cloves, black pepper, ginger, allspice, bay leaves and chilies. You can experiment using any or all of the above until get that "just right" taste. If you want to try something with smaller results than a gallon jar then you can simply cut the recipe in half or fourths or whatever you desire. Enjoy!

Ladies Conference

I'm so excited! I can't wait until tomorrow because my mil and I are going to be attending a ladies conference at one of the churches here in town. It was so good last year. I walked away feeling like I had truly been fed. The speaker last year was a lady named Jan Silvius and the theme of her conference was "Legacy of Love". She spoke about how we need to be big girls and that big girls don't whine. Her book by the same name sold out so I rushed home and ordered it off of ebay. We had a a leisurely lunch and it was just an all around blessed experience. I can't wait to hear the speaker tomorrow. Her last name is Tuttle.

Fly Wheel

If you havent' seen the movie Fly Wheel you have to get your hands on it. This movie is soooo good! It even made my husband cry. I don't want to give anything away, but the movie is put on by a church group (I think from Albany, GA) and the Lord has his hand all over it. What a powerful message! Rent or borrow it today! You won't be sorry you did. Another movie that this group has done is Facing the Giants and it has a similar message. I haven't seen it yet, but this one is next to come from my blockbuster online account so I'm pretty excited to get to see it. Believe it or not, my son told me that they showed it at his high school the other day when they were finished with testing. The Lord is working in young lives all over the place. We might think that all is in despair, but God is still on the throne. Praise his Holy name!!!

I deleted Gomez Peer...

I didn't really think the Gomez Peer was worth it. After having it downloaded and running or tracking or whatever it does they sent me an email letting me know that they weren't needing people from my area. So I deleted the program. I think they wanted me to keep it up and running, but I didn't see any point in it. The only money making website that I'm having any luck with right now is dukeofdollars.com and I'm really do well with them compared to the time I spend. If you haven't signed up for this gomez.peer thingy I would suggest you do so now. You only have to download the software and have it running in the background while you're on the internet. It calculates your earnings according to some algorithm I'm not sure about. I think it has something to do with the records that the program is able to retrieve about your website loading times.
